Wines made from red fruits generally have sufficient tannin, paler fruits may not.
Adding tannin will turn an insipid wine into a wine with bite and zest. It also helps with the preservation of the wine.
Use 1 level teaspoon per gallon of must. Add to must when cooling and stir 3-4 times daily for 4-5 days.
